Greens Quiche with Gruyere

Yields1 Serving
 favorite crust (either preprepared or homemade)
 olive oil
 onions of some type, about 1/2 cup
 minced garlic cloves or scapes, about 3 cloves worth
 1 bunch mustard greens (about 2 C)
 1/4 C dry white wine
 1/2 C milk
 4 eggs
 1/2 C cheese - Gruyere or Swiss
 pinch of nutmeg
 1 t salt
 ground pepper to taste

Preheat oven to 400 F

Grease pie pan

Precook crust about 10 min

Prepare filling by sautéing onions until translucent, adding chopped greens until they wilt in pan, and adding white wine and cooking down a bit until moisture reduces

Whisk milk, eggs, cheese, nutmeg, salt and pepper in separate bowl. Add cooked veggies and stir well.

Put egg mixture into crust and bake until center of quiche is set, about 30-35 minutes.

Placing tin foil around crust edges can prevent crust from overly browning.
