
Greens Quiche with Gruyere
Arugula, Broccoli Raab, Garlic Scape, Green Garlic, Green Onion, Mizuna, Mustard Greens, Onion, Scallion, Shallots

Ingredients
favorite crust (either preprepared or homemade)
olive oil
onions of some type, about 1/2 cup
minced garlic cloves or scapes, about 3 cloves worth
1 bunch mustard greens (about 2 C)
1/4 C dry white wine
1/2 C milk
4 eggs
1/2 C cheese - Gruyere or Swiss
pinch of nutmeg
1 t salt
ground pepper to taste
Directions
1Preheat oven to 400 F
2Grease pie pan
3Precook crust about 10 min
4Prepare filling by sautéing onions until translucent, adding chopped greens until they wilt in pan, and adding white wine and cooking down a bit until moisture reduces
5Whisk milk, eggs, cheese, nutmeg, salt and pepper in separate bowl. Add cooked veggies and stir well.
6Put egg mixture into crust and bake until center of quiche is set, about 30-35 minutes.
7Placing tin foil around crust edges can prevent crust from overly browning.
8Serve
