Steve’s Carrot Zucchni Bars
Steve's Carrot Zucchni Bars
1 1/3 C brown sugar
1 C margarine or butter
6 oz. cream cheese
2 eggs
2 t vanilla
3 C flour
2 t baking powder
1/2 t salt
1 1/3 C grated carrots
1 1/3 C grated, unpeeled zucchini
2/3 C raisins
Frosting:
1/4 C butter
3 oz. cream cheese
1 1/2 C powdered sugar
1/2 t vanilla

Beat sugar, margarine/butter and cream cheese in a large bowl with an electric mixer until fluffy.

Beat in eggs and vanilla, beat in dry ingredients. Then stir in zucchini, carrots, and raisins and spoon into a greased 9 x 13 pan.

Bake at 350 F for approximately 38 minutes.

Cool.

Prepare frosting: Beat all ingredients together until fluffy.
