Sweet Potatoes Caribbean Style
Ingredients
1 pound sweet potatoes cooked, peeled, and mashed
4 large eggs
2 cups loosely packed grated fresh coconut
Pinch of salt
1 tablespoon unbleached all-purpose flour
1/4 cup molasses
1 ripe banana, mashed
1/4 cup dark rum or bourbon
1 tablespoon grated fresh ginger
Spices to taste
Directions
1Preheat the oven to 350°F.
2 Mix all of the ingredients together and bake for about 45 minutes, until the pudding is set.
