Potato and Kale Soup
1 lg. onion, chopped
1 tbsp. butter
1 bunch kale
1 clove garlic, minced
2-3 lg. potatoes, white or yellow preferable
5 c. water or stock
Salt and pepper to taste
1Saute onion and garlic in the butter until onion is clear and soft.
2 Add 2 cups water and the potatoes.
3 Simmer, covered, until potatoes start to soften.
4 Wash kale and chop; steam kale separately.
5 When potatoes are well done, puree half of them with remaining water.
6 Combine all ingredients.
7 Add salt and pepper.
8 If needed, add more water or milk for desired consistency.
