Nissa's Summer Squash Casserole


2 pounds summer squash or zucchini, sliced (6 cups)

1/4 cup chopped onion

1 can cream of chicken soup

1 cup sour cream

1 cup shredded carrots

1-8 oz. pkg. herb seasoned stuffing mix (or 1 pkg. Stove Top chicken flavor stuffing mix)

1/2 cup melted margarine


1Cook squash and onion in boiling water for 5 minutes. Drain. Combine soup and sour cream, stir in carrots. Fold in drained squash and onions.

2 Combine stuffing mix and butter. Spread half of mixture in 2 qt. baking dish (or 12x7 1/2x2 pan). Spoon vegetable mixture atop. Sprinkle remaining stuffing mix over vegetables. Bake at 350° for 25 to 30 minutes.
