Kale with Olives
1 bunch kale, stems and ribs removed
4 T olive oil
1/3 C pitted Kalamata olives, coarsely chopped
1/4 t red pepper flakes
1 lemon, quartered
minced garlic added is a great variation
1Chop and rinse the kale.
2 Lightly stir-fry the kale in the oil for 3-5 minutes, until tender and bright green. The water used to rinse the leaves will be enough to steam the leaves.
3 Remove from heat and toss immediately with the oil, olives, pepper and salt. Serve with lemon wedges.
