Yields1 Serving
 beets (any amount and size)
  olive oil
  salt
  pepper

Bring water to a boil. Using a sharp knife, mark an X in the skin of each beets. Then drop the beets (whole) in and boil until the beets are tender. (10-15 minutes) You should be able to stick a fork in them when ready.

Remove the beets from the water and strain. Rinse with cool water. Then slip the skins off.

Cut the beets into whatever shape is the best mouth appeal to you. (I like them cubed).

Place the beets in a bowl and drizzle them with enough olive oil to coat them. Add salt and pepper to taste.

You can eat them warm, reheat them, or eat them cold - whatever your preference. (I like them cold.)
