Celeriac Buttermilk Slaw
Ingredients
1 Large celeriac, julienned
½ cup buttermilk
2 tblsp vegetable oil
Juice from 1 fresh lime or 1 tblsp of red wine vinegar
Salt and pepper to taste
1 clove of garlic.
Directions
1Heat a sauce pan with water to a boil. Add the julienned celeriac and cook for 40 to 60 seconds just to blanch. Remove and cool under cold water.
2 In a food processor combine the remaining ingredients. Blend and serve over the celeriac.
3 Best at room temperature, but can also be refridgerated fro later use. Can also add fresh or dried herbs to the dressing as you see fit
