Wishing for More Stomachs
One of the amazing things about being a farmer is having year round access to the food we grow and feeding ourselves locally every month of the year.
While this is awesome to be able to do, it does mean that for the cold months – December through April, our diet is very consistently the same…. root crops, squashes, cabbages, eggs, pork and chicken (we raise pigs and chickens at a homestead level). For the deep winter months napa cabbage and red cabbage become my lettuce, and kim chi is a mainstay on my plate – one of the few things I eat that doesn’t required being baked.
Imagine, then, how truly exciting it is to have all of these fresh vegetables available this time of year! The fields, our storage coolers, and my refrigerator are packed with fresh vegetables.
My vegetable consumption is wildly high this time of year ( i can bust through a veggie share box in just a few days). And even then. I wish I could eat so much more!
I just want to gobble all the freshness… the peas, broccoli, cauliflower, lettuces, turnips, kohlrabi, cucumbers, zucchini, basil, parsley, kale and more. I want to make so many more meals, but there are only 3 in a day. And my stomach is only so big.
This time of year when I am writing the newsletter and posting recipes, I just want to make it all. If only there were five meals a day!
I am actually saddened by how many veggies I can’t eat, how many meals I can’t make because my stomach simply isn’t big enough. (and trust me, I eat A LOT).
I want three stomachs June through October. I want to eat it ALL.
The freshness is so fleeting. The tastes from the field so phenomenal.
In March, when I’m eating roasted beets (again!) I’ll be dreaming of all these summer veggies.
So I am doing my best to absolutely stuff myself with vegetables every chance I get!
