Celeriac Buttermilk Slaw

Yields1 Serving
 1 Large celeriac, julienned
  ½ cup buttermilk
  2 tblsp vegetable oil
  Juice from 1 fresh lime or 1 tblsp of red wine vinegar
  Salt and pepper to taste
  1 clove of garlic.

Heat a sauce pan with water to a boil. Add the julienned celeriac and cook for 40 to 60 seconds just to blanch. Remove and cool under cold water.

In a food processor combine the remaining ingredients. Blend and serve over the celeriac.

Best at room temperature, but can also be refridgerated fro later use. Can also add fresh or dried herbs to the dressing as you see fit
