Winter Salad with Creamy Tahini Dressing
2 C any combo of grated beets, carrots, and/or red cabbage
2 C any combo of grated celeriac, radish, and/or green cabbage
1.5 C chopped kale and/or parsley
1 medium red onion, finely chopped
1 C sprouts (optional)
Dressing:
3T seasme seeds
1/2 C tahini
1/4 C lemon juice
1/4 C sesame oil
1/4 C canola oil
1/4 C soy sauce, tamari, or shoyu
dash of bot pepper suace
1 t dried dill weed

Toast sesame seeds in dry skillet or hot even several minutes, tossing often.

Cool and mix with remaining ingredients and 1/4 C water.

Toss all vegetable ingredients and serve with Creamy Tahini Dressing, or your favorite dressing
