Southwestern Cabbage and Apple Slaw

 1/2 head Red Cabbage, cored and shredded with slicing disk of food processor, or with sharp knife
  2 cups Tart Apple, peeled, cored, shredded with shredding disk of food processor or box grater
  1/3 bunch Cilantro, chopped
  1/4 cup Lime Juice
  3 tablespoons Orange Juice
  1/2 teaspoon Cumin
  1/2 cup Canola or Sunflower Oil
  1 clove Garlic, minced
  Salt and Pepper

Toss cabbage, apples and cilantro together in a bowl. In a separate small bowl, whisk together lime and orange juices, cumin, oil and garlic. Season to taste with salt and pepper. Dress slaw, adjust seasonings, and serve.
