Marinated Snap Peas
Marinated Snap Peas
1 bag sugar snap peas
1 lemon
1 T champagne vinegar
1⁄2 t salt
1/8 t pepper
2 T olive oil

Heat a pot of water to boiling. Drop in your bag of snap peas and blanch for 1 minute.

Drain and rinse under cool water.

Combine the zest and juice of one lemon with the remaining ingredients.

Pour over the peas and chill until cold through. Dill is a nice addition too.
