Kale Chips

Yields1 Serving
 Cooking spray
  1 small bunch kale (about 1/2 pound)
  1 tablespoon olive oil
  1/4 teaspoon garlic powder
  1/4 teaspoon salt
  Optional: Mince up half a garlic scape instead of the garlic powder.
  Optional: Add a few sprinkles of red pepper flakes or cayenne pepper to make these spicy!

Preheat the oven to 350°F. Depending on your oven you may want to cook as low as 300°F.

Spray two baking trays with cooking spray. Remove the center rib and stems from each kale leaf and discard(or save for another use,like soup). Tear or cut the leaves into bite-size pieces, about 2 to 3 inches wide. Wash the kale and dry it very well (this is very important as any water will make these steam instead of crisping up.)

Place the kale in a large bowl. Drizzle with the oil and sprinkle with the garlic powder and salt, and massage the oil and seasonings into the kale with your hands to distribute evenly. Place the kale in a single layer on the baking sheets, sprinkle with red pepper flakes or cayenne if using.

Bake until crisp and the edges are slightly browned, 12 to 15 minutes. Watch carefully as you do not want them to burn, just crisp. You may want to flip the kale half way through.

If you have cooling racks that fit into your pans, you can skip spraying the pans and lay the kale directly on top of the cooling racks. This will allow for the hot air to move completely around the kale and guarantee that they will be crispy!
