Yields1 Serving
 1/2 cup vegetable oil (or substitute half with unsweetened applesauce)
  1 1/2 cup sugar
  2 tsp vanilla
  2 cups flour
  1/2 cup unsweetened cocoa powder
  1 1/2 tsp baking soda
  1 tsp salt
  2 cups grated zucchini
  1/2 cup toasted chopped nuts (optional)

Preheat oven to 350 degrees.

Sift together flour, baking soda, cocoa, and salt. Mix oil, sugar, and vanilla in a large bowl. Add dry ingredients and stir just to combine.

Fold in the zucchini and nuts. (The batter will seem very dry and like something isn't right - but don't worry, the moisture will come out of the zucchini as it bakes and all will be well in the end.)

Bake 25-30 minutes until the surface springs back lightly when touched.
