Green Beans Simmered with Tomato

Yields1 Serving
 2 T olive oil
  1 onion, sliced into thin rounds
  1 garlic clove, finely chopped
  1.25 pounds of green beans (this is what your bag weighs this week)
  1 large ripe tomato, peeled, seeded, and diced
  2 t chopped parsley
  2 t dried dill
  salt and fresh ground pepper

Heat the oil in a medium or large skillet, add the onions, and cook over medium heat until soft and translucent, about 4 minutes.

Add the garlic, beans, tomato, and enough water just to cover.

Simmer until the beans are tender, then add the herbs and simmer 1 or 2 minutes more.

Season with salt and pepper to taste.

Serve hot, tepid, or even chilled.
