Celeriac Carrot Slaw

Celeriac Carrot Slaw

Yields1 Serving
 1 large or two small celeriac bulbs
  2 large carrots
  2 cloves of garlic or 1 medium shallot
  2 tblsp of any type of vinegar (white, red wine or apple cider, lemon juice also works)
  ¼ tsp salt
  2 tsp Dijon mustard
  1/3 cup olive oil
  1 tblsp sour cream (plain yogurt works as well)
  fresh ground black pepper to taste

Peel celeriac with a sharp knife. Grate with a cheese grater or food processor. Peel carrots and grate the same way. You are shooting for about 4 cups of grated carrot and celeriac.

Mix minced garlic or shallot, vinegar, salt and mustard in small bowl.

Whisk in olive oil until smooth and thickened.

Stir in sour cream or yogurt and fresh ground pepper to taste. Add more salt if necessary.

Pour over grated vegetables and toss gently. Allow to marinate for 30 minutes.
