Cassie’s Sesame Kale Saute

 1 bunch green kale
  1 fresh lime (or lemon)
  Sesame oil
  Garlic (optional)
  Salt and pepper to taste

Strip the kale leaves so as to discard the main stem, which tends to be very chewy this time of year. Chop into 1-2 inch pieces.

In a cast iron skillet heat 1-2 tblsp of sesame oil then add chopped kale to hot oil. Stir and cover for 2-3 minutes. Add chopped garlic now if desired. Stir more and continue cooking covered until kale is fully wilted and bright green.

At this point squeeze on your fresh lime juice, salt and pepper to taste and serve immediately.
