Tofu Broccoli Cashew Peanut Madness
1 T butter or oil
1 large onion, chopped
2 scapes, minced
1 pound herbed tofu
2 T tamari or soy sauce, divided
1/2 - 3/4 C peanut butter, preferably crunchy
2-3 t lemon juice
1/2 t cumin or more to taste
cayenne to taste
1 head broccoli, peeled and chopped
hot, cooked rice
handful or roasted cashews, chopped
1Heat butter or oil in skillet; add onion and garlic; saute until soft.
2 Add tofu and 1 T tamari; saute until brown.
3 Remove from pan. In same pan, mix peanut butter, lemon juice, remaining T tamari, cumin, and cayenne. Thin with up to 1 C water to obtain gravy-like texture.
4 Stir in tofu mixture.
5 Steam broccoli.
6 Serve sauce over broccoli and brown rice, topped with cashews.
