Sweet Potato Hash with Pecans
Ingredients
1-2 sweet potatoes, diced
1-2 regular potatoes (any variety works), diced
1 small onion, diced
1-2 garlic cloves, minced (or garlic salt)
1/4 to 1/2 chopped pecans
1-2 tablespoons cooking fat
Salt and pepper to taste
Directions
1Heat cooking fat in skillet (preferably cast iron) over medium heat.
2 Once hot, add in sweet potatoes and regular potatoes, cover and cook for 5-10 minutes until softened. If needed, add in a bit of water to help steam.
3 Remove cover and add in onions, mixing them into the potatoes. Continue to cook, uncovered, stirring occasionally, until potatoes start to brown, 5-10 minutes. Mix in garlic and pecans and continue to cook until pecans start to brown 3-5 minutes. Watch closely (and turn down heat if needed) so that the pecans do not burn.
4 Salt and pepper to taste and serve.
5 These are great reheated the next day and used as a stuffing for an omelette.
