Roasted Zucchini Kabobs
2 larger zucchini
2 T olive oil
¼ c balsamic vinegar
1 t mustard, ground pepper
1 clove of minced garlic
handful of whatever herbs you have lying around
1Cut zucchini into cubes and salt as described above.
2 Blend together remaining ingredients.Toss with the zucchini.
3 Skewer onto kabob sticks and grill or broil in the oven until charred.
4 Serve with a dip made of the exact same dressing above or your favorite salad dressing- YUM.
