1 c bulgur (about 1 pound)
1/3 cup chopped green onions, optional
1 bunch fresh parsley, chopped
1 cucumber, diced
1 large red bell pepper, diced
1 cup chopped fresh tomato
3/4 cups water
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons chopped fresh thyme
1Toss everything together and let it marinate overnight.
2 Adjust the seasonings and add more fresh tomato or herbs to taste.
