Nancy's Corn Salsa


2 C  fresh cooked corn

1 small red sweet pepper, finely chopped

2 Tbsp finely chopped onions

2 Tbsp chopped fresh cilantro

2 Tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp olive oil

salt (to taste)

Hot pepper flakes, or minced Hot Wax Pepper (to taste- if you want it)


1In large bowl, mix all ingredients. Chill

2 I have changed cooked corn using grilled corn ( it is awesome) You can use red, green, or yellow peppers or a mix of the three. White balsamic adds an other twist to the dish.
