Michele’s Zucchini Stew

1 lb lean ground beef or turkey

1 large onion, chopped

1 t salt

1/2 t ground black pepper

3 large tomatoes, diced

2 large potatoes, diced

2 C corn kernels

4 medium zucchini, died into 1-inch cubes


1Sure the ground beef and onion together in a Dutch over over medium heat, breaking up the meat as it cooks. When meat is browned, drain off any fate and season with salt and pepper.

2Add the tomatoes and continue heating.

3Add potatoes and let simmer until the potatoes are soft and lay to pierce, about 15 minutes.

4Add the corn and zucchini and continue to simmer until they are tender, about 3 minutes.

5Do not overcook.
