Guacamole with Raw Vegetables
3 ripe avocados
Juice from 1/2 a lime
1/4 cup chopped cilantro
1 minced small scallion
1/2 minced garlic scape (or garlic salt to taste)
cayenne pepper (optional)
Cut up vegetables of choice for dipping(such as radishes, kohlrabi, salad turnips, or whatever vegetables you may have on hand)
OR lettuce leaves and protein of choice (black beans, cooked chicken, etc.)
1Cut the avocados in half, scoop out the pit and discard, and then scoop out the avocado into a small mixing bowl.
2 Squeeze the lime juice into the bowl, add the cilantro, scallion, garlic scape (or a little garlic salt), salt to taste and a few sprinkles of cayenne (if using).
3 Mash everything together and mix until cilantro, scallion, and garlic scape are evenly mixed throughout.
4 Taste and add additional salt, cayenne and/or lime juice if needed.
5 Serve immediately with cut up vegetables.
6 Also tastes great on top of a lettuce wrap with black beans, cooked chicken, etc. inside.
