2 large cucumbers
2 T fresh lime juice
2 T extra-virgin olive oil
1 C fresh shelled peas, blanched
4 radishes, thinly sliced
1/2 C mint, thinly sliced
4 oz feta cheese, crumbled
fine sea salt and freshly ground black pepper
1Use a mandoline or vegetable peeler to slice your cucumber into thin ribbons.
2Toss them with the lime juice and olive oil.
3Add the peas, radishes, mint, and feta.
4Toss again until well combined.
5Season with salt and pepper and serve immediately.
6Don't let stand long before serving - will become soggy.
