Creamy Spinach Pasta Sauce
2 cloves garlic, minced
1 tablespoon butter
1/3 cup white wine
1/2 pound chopped, fresh spinach, squeezed dry
1/2 cup cream cheese
1 cup evaporated milk
1/4 cup freshly grated parmesan cheese
1Saute garlic in butter over very low heat for 2 minutes.
2 Add wine, bring to a boil, add spinach and reduce heat to low.
3 Add cream cheese and stir until melted.
4 Add milk, increase heat to medium high and stir until sauce is smooth and heated through.
5 Remove from heat, add Parmesan and stir until cheese melts.
6 Serve over hot, drained pasta.
