Cassie’s Cabin Sauce
3- to 4 pounds slicing tomatoes
2 carmen sweet peppers
1 onion, either yellow or white sweet
2 cloves garlic, minced
fresh basil, if you have any
1Core and chop the tomatoes. Put the tomatoes in a large soup pot and cook for at least 45 minutes. This gives enough time for the water to boil off and the sauce to thicken.
2 Meanwhile chop and saute the onions, garlic, and sweet peppers.
3 When sauce has thickened to your liking, add the sauted vegetables to the tomatoes.
4 Then puree the sauce, vegetables and all, using either a blender or immersion blender.
5 Return sauce to pot and add cooked ground beef or meatballs if you like.
6 Serve over noodles.
