Beauty Heart and Celeriac Salad
2 Tblsp walnut oil
2 Tblsp lemon juice
1 Tblsp honey
1/2 tsp salt
Black pepper to taste
2 cups shredded carrots
1 medium beauty heart radish, peeled and shredded
1/2 cup peeled and shredded celeriac
1/4 cup raisins
1/4 cup chopped walnuts
1Cook the walnuts over medium heat in a small skillet, stirring constantly, for several minutes, until they darken slightly and become fragrant.
2 Whisk oil, lemon juice, honey, salt and pepper in a large bowl.
3 Add vegetables, raisins, and walnuts.
4 Toss and combine.
