Anna’s Beet Lentil Soup
Water, or stock
1-2 cans diced tomatoes
1Saute garlic and onion in a good amount of olive oil.
2 Add cumin, turmeric, and chili powder and stir for a few minutes.
3 Add washed lentils and tomatoes and salt. Stir over heat for a few more minutes
4 Add water (enough to cook lentils, but not enough to make soup). Cover and cook.
5 Once lentils are half-way to done, added beets, carrots, and more water to make the broth.
6 Add kale and more water near end and keep on heat for a few minutes.
7 Cover and let sit for kale to cook fully.
