Kale with Olives
Kale with Olives
 1 bunch kale, stems and ribs removed
 	4 T olive oil
 	1/3 C pitted Kalamata olives, coarsely chopped
 	1/4 t red pepper flakes
 	salt
 	1 lemon, quartered
 	minced garlic added is a great variation

Chop and rinse the kale.

Lightly stir-fry the kale in the oil for 3-5 minutes, until tender and bright green. The water used to rinse the leaves will be enough to steam the leaves.

Remove from heat and toss immediately with the oil, olives, pepper and salt. Serve with lemon wedges.
