Ella’s Marinated Summer Squash Salad
Ella's Marinated Summer Squash Salad
3-4 small to medium summer squash, of different colors
2 Tbsp olive oil
1/2 cup of some combination of vinegars and/or lemon juice
pinch or more red pepper flakes
2-4 cloves garlic
1/2 cup or more of some combination of fresh parsley, oregano, thyme, mint and/or basil. If mint, I usually don't use other herbs, and I usually don't use more than 2 in combination.
1 tsp salt
1 tsp+ fresh group black pepper

Slice the summer squash very thinly (a mandolin is perfect for this).

Squish or finely chop the garlic.

Chop the herbs.

Stir everything together in a bowl.

Let sit for at least 4 hours (overnight is ideal) and serve!
