Winter Vegetable Hash

Yields1 Serving
 3 tablespoons olive oil
  2 tablespoons butter
  3-4 medium red potatoes, (boiled whole for 10 minutes then diced (should still be firm)
  ½ lb. fresh mushrooms, diced (shittake are best)
  1 carrot, diced
  1 small festival squash, peeled and diced
  1 leek, finely chopped
  1 clove garlic minced
  1 pinch salt
  1 pinch ground black pepper
  1 cup chopped kale
  5 sprigs parsley

Place oil and butter in a large skillet over medium heat. Melt butter and mix in carrots, potatoes, mushrooms, squash, garlic, and leek. Season with salt, and pepper. Cook 15 minutes, stirring occasionally, until potatoes are tender.

Mix kale and parsley into skillet. Continue cooking 5 minutes, until kale is wilted. Serve and enjoy!
