Anna’s Beet Lentil Soup

Anna's Beet Lentil Soup

Yields1 Serving
 Garlic
  Onion
  Cumin
  Turmeric
  Chili powder
  Washed lentils
  Water, or stock
  1-2 cans diced tomatoes
  Beets, cubed
  Carrots, cubed
  Kale

Saute garlic and onion in a good amount of olive oil.

Add cumin, turmeric, and chili powder and stir for a few minutes.

Add washed lentils and tomatoes and salt. Stir over heat for a few more minutes

Add water (enough to cook lentils, but not enough to make soup). Cover and cook.

Once lentils are half-way to done, added beets, carrots, and more water to make the broth.

Add kale and more water near end and keep on heat for a few minutes.

Cover and let sit for kale to cook fully.
