Roasted Broccoli and Garlic Scapes

Roasted Broccoli and Garlic Scapes

Yields1 Serving
 1 head broccoli, broken down into smaller pieces (Make sure to use the stem! Trim off the bottom, peel the stem like you would a carrot, then chop it up.)
  Garlic scapes (at least 4-5, more if you have them), roughly chopped
  2 tablespoons olive oil
  salt and pepper to taste
  garlic salt (optional)

Heat oven to 425 degrees (depending on your oven you may want to go lower to 400 or higher to 450).

In a large bowl combine the broccoli pieces, the garlic scape pieces and olive oil. Mix so that everything is well coated.

Sprinkle with salt, pepper, and garlic salt (if using) and mix again.

Arrange broccoli and garlic scapes in a single layer on a rimmed baking sheet. Use 2 sheets if necessary, you want to make sure the broccoli is not overcrowded or it will steam too much and not brown well.

Bake 20-30 minutes, shaking the pan (or flipping the broccoli with a spatula) halfway through.

Remove from oven when broccoli is a dark green color and browned in some spots. We like ours really crispy!
