Sweet Potato Hash with Pecans

Yields1 Serving
 1-2 sweet potatoes, diced
  1-2 regular potatoes (any variety works), diced
  1 small onion, diced
  1-2 garlic cloves, minced (or garlic salt)
  1/4 to 1/2 chopped pecans
  1-2 tablespoons cooking fat
  Salt and pepper to taste

Heat cooking fat in skillet (preferably cast iron) over medium heat.

Once hot, add in sweet potatoes and regular potatoes, cover and cook for 5-10 minutes until softened. If needed, add in a bit of water to help steam.

Remove cover and add in onions, mixing them into the potatoes. Continue to cook, uncovered, stirring occasionally, until potatoes start to brown, 5-10 minutes. Mix in garlic and pecans and continue to cook until pecans start to brown 3-5 minutes. Watch closely (and turn down heat if needed) so that the pecans do not burn.

Salt and pepper to taste and serve.

These are great reheated the next day and used as a stuffing for an omelette.
