 equal parts cucumber and tomato (I use 2 average size cukes, 2-3 large tomatoes for four side servings)
  1 small garlic clove
  1 small shallot or 1 T. onion
  2-4 T. cilantro or parsley
  1/2 tsp salt, or to taste

Blend!

The soup is better if it has 30 minutes to rest and let the flavors blend. We like it the consistency of a slushie, but if it's too thick you can add a little water. A splash of lime juice doesn't hurt, either.
