Cassie's Cabin Sauce

Yields1 Serving
 3- to 4 pounds slicing tomatoes
  2 carmen sweet peppers
  1 onion, either yellow or white sweet
  2 cloves garlic, minced
   fresh basil, if you have any

Core and chop the tomatoes. Put the tomatoes in a large soup pot and cook for at least 45 minutes. This gives enough time for the water to boil off and the sauce to thicken.

Meanwhile chop and saute the onions, garlic, and sweet peppers.

When sauce has thickened to your liking, add the sauted vegetables to the tomatoes.

Then puree the sauce, vegetables and all, using either a blender or immersion blender.

Return sauce to pot and add cooked ground beef or meatballs if you like.

Serve over noodles.
