Strawberry Radish Arugula Salad
1 head Lettuce, washed, dried and torn into bite size pieces
1 bunch Arugula, washed, dried and torn into bite size pieces
1 pint Strawberry, washed, hulled, halved
1/3 cup Almond, sliced and toasted
3 ounces Feta Cheese, crumbled
3 tablespoons Aged Balsamic Vinegar
1 teaspoon Dijon Mustard
1 teaspoon Poppy Seed
1/2 teaspoon Sea Salt
Black Pepper, freshly ground, to taste
1/2 cup Extra Virgin Olive Oil
1Place the lettuce, arugula, and strawberries in a large salad bowl, and top withe the toasted almonds and crumbled feta.
2 In a small bowl, whisk together the balsamic vinegar, dijon mustard, poppy seeds, salt and pepper, and slowly add the olive oil in a stream while whisking. Toss the salad with the dressing immediately before serving.
