Kale and Potatoes Colcannon

Ingredients

2 lbs potatoes

3 Tbsp butter

1 tsp salt pepper to taste

3 cups finely chopped kale

a little milk or cream

1 medium onion

Directions

1Cook quartered potatoes in salted water for 20 minutes. Drain and mash.

2 Cook kale in 1 inch boiling water until tender. Drain and set aside.

3 Saute onions in half the butter, combine the onions with potatoes, kale, and 2-3 Tbsp milk or cream, remaining butter.

4 Mash and serve.
