Easy Squash and Broccoli Bake
1 butternut squash, peeled and chopped in 1-inch cubes
1.5 cups of broccoli, coarsely chopped
2 tablespoons olive oil
salt and pepper, to taste
1 medium onion, minced
handful of raisins ~ 1/4 cup (optionally chopped up – )
1Preheat the oven to 400F.
2 Toss broccoli and squash with olive oil, salt, pepper, and garlic powder. Spread them out on a baking tray and roast in the oven for 50 minutes.
3 While the veggies are roasting, chop up the raisins and soak them in water. Drain them.
4 Take the veggies out of the oven and mix in the raisins.
5 Serve hot or room temperature. Optional, add PARMESAN.
