Chicken Sausages with Broccoli and Cashews
1 head of broccoli, head cut into florets and stem peeled and diced
2-3 precooked chicken sausages, sliced into coins
1/3 cup raw cashews
2 tablespoons olive oil
1/2 red pepper, diced (optional)
1 small onion, diced (optional)
Garlic salt to taste (optional)
Salt and pepper to taste
1Saute broccoli, onions (if using) and red pepper (if using) in the olive oil over medium heat in a large skillet (preferably cast iron), stirring occasionally, until broccoli starts to lightly brown, approximately 8-10 minutes. If you prefer your broccoli well cooked, you may want to cover the pan to allow it to steam.
2 Add the chicken sausages and cook until heated through, 3 to 5 minutes. Stir once or twice.
3 Add cashews, mix into broccoli and chicken sausages. Cook 2-3 minutes or until cashews start to lightly brown.
4 Take off heat, season with salt and pepper (and garlic salt if using).
