Beautiful Beet Salad with Honey-Lime Vinaigrette
1 bunch salad greens (about 6 cups)
3-4 small raw beets, peeled and shredded or thinly sliced (about 2 cups)
1/2 small red onion, thinly sliced
3/4 cup crumbled feta
1/2 cup sunflower seeds
Juice from 1 lime (plus grated peel; optional)
1 tablespoon balsamic vinegar (or to taste)
1 tablespoon honey
1/4 cup olive oil
Salt and ground black pepper to taste
1Salad: Place the salad greens in a serving bowl. Add the beets and onion and sprinkle the feta over the vegetables. Top with sunflower seeds.
2Honey-Lime Vinaigrette: Whisk all ingredients together, adjust amounts to suit your taste. Pour over the salad and toss. Let the salad sit in the refrigerator for 15 minutes prior to serving to blend the flavors.
