Arugula, Pear, Kohlrabi, and Parmesan Salad

Ingredients

3 ripe pears

1 kohlrabi

2 t lemon jice

3 T hazelnut or walnut oil

1⁄4 pound arugula (about 1⁄2 of your bag)

3 oz parmesan chees

Freshly ground black pepper

Directions

1Peel and core the pears and slice thickly. Moisten with lemon juice to keep the flesh white.

2 Peel the kohlrabi and slice/shave thinly.

3 Combine the nut oil with the pears. Add the arugula leaves and toss.

4 Top with parmesan cheese shavings and black pepper.
