Cucumber and Lettuce Salad with Parsley Garlic Vinaigrette
2/3 head Lettuce , shredded,washed and spun dry
1-2 Cucumber , peeled (optional) and cut in 1 inch chunks
1/4 bunch Parsley
4 tablespoons Lemon Juice
1 tablespoon Dijon Mustard
1 teaspoon Honey , or agave nectar
1 clove Garlic , peeled
1/2 cup Extra Virgin Olive Oil
Salt and Pepper , to taste
1Toss the vegetables together in a salad bowl.
2 Put parsley, lemon juice, dijon, honey and garlic in a blender, and blend until smooth. With motor running drizzle in olive oil and then season to taste with salt and pepper.
3 Only dress as much salad as you will eat in one seating.
