Cassie’s Taco Salad
One head of lettuce, washed and chopped
Peppers, either green or red, diced
1-2 C diced tomatoes of any kind (if you don't have, salsa does the trick just fine)
1 medium onion, diced and softened with heat and oil on the stove
1 pound ground meat, browned with taco seasoning
(OR 1 pound tofu, browned with taco seasoning)
1-2 zucchini, sauteed in oil just a tiny bit, so there's still a little crunch
Sweet corn, shaved off the cob
Sour cream, to taste
Salsa, to taste
Crumbled tortilla chips, about a handful per plate
Optional: Add a can of black beans to meat/tofu mixture
1Add lettuce to each plate.
2 Put each veggie or condiment in separate serving vessel.
3 Let each eater assemble salad to his/her preference.
4 Use a knife and fork to cut the salad up and mix all the ingredients together. Enjoy!
