Pickled Red Onions

 1/4 C red wine vinegar
 1/4 C cold water
 1.5 t kosher salt
 1.5 t sugar
 1 red onion, peeled and sliced into very thin rings

Combine the vinegar, water, salt, and sugar in the a small bowl and stir.

Add the onion and toss to coat with the mixture.

Cover and refrigerate for at least 30 minutes and up to 2 weeks.
