Chicken Sausages with Broccoli and Cashews
Saute broccoli, onions (if using) and red pepper (if using) in the olive oil over medium heat in a large skillet (preferably cast iron), stirring occasionally, until broccoli starts to lightly brown, approximately 8-10 minutes. If you prefer your broccoli well cooked, you may want to cover the pan to allow it to steam.
Add the chicken sausages and cook until heated through, 3 to 5 minutes. Stir once or twice.
Add cashews, mix into broccoli and chicken sausages. Cook 2-3 minutes or until cashews start to lightly brown.
Take off heat, season with salt and pepper (and garlic salt if using).
