Sweet and Sour Cucumber Salad

2 medium cucumbers, halved, seeded and sliced thin

1 small onion, sliced into thin half-moons

2 T seasoned rice vinegar

2 T chopped fresh parsley or basil

Combine all ingredients in a bowl and serve within 1 hour. They get watery if they sit.
